corn fufu and huckleberry made simple


Hello and welcome to chef B's corner.today i bring to you simple and easy reciepe to cook corn fufu and huckleberry with chicken ( kati kati) the ingredients are listed below 

ingredients

huckleberry ( njama njama)
chicken
palmoil
vegetable oil
green onions , onions 
Maggie and salt
corn flour
black pepper
fresh tomatoes
contri onions

procedure

firstly you select and wash you huckleberry properly to avoid having sand sensation when eating it 
place a pot on the fire ,pour water and it and allow it to boil. when it has reached a hundred degree Celsius its time to put in your salt and the huckleberry follows. the salt in this process of boiling is ensure the huckleberry maintains its green colour  and to give taste to it
wash and chop  your tomatoes and onion into smaller pieces 
place a pot on the fire ,add palm oil  and allow it to get hot a bit then put in some vegetable oil at this point you can put in your chopped tomatoes and onion and fry till you see the tomatoes getting dry then you add Maggie and salt to taste then add water to ensure the oil gets ready.
when the water gets dry its time to put in your huckleberry( ensure you squeeze and cut the huckleberry before adding to the pot)
at this stage you taste the Maggie and salt to see if its okay by you if all these steps are followed your huckleberry is ready
we now move to the steps in preparing our chicken ( kati kati) but it will not be done in the KOM traditional way 
you have to grill your chicken with salt and Maggie to give it taste
cut into your desired shape and parboil with onion , Maggie and salt( when putting your Maggie and salt be mindful of the fact that you used some when grilling the chicken) 
next step fry your tomatoes and green onions with onion in vegetable oil  when you realize that its getting dry turn in your stock from the chicken pot and allow to boil for sometime
while that is cooking grind your contri onions and black pepper using a blender or my mothers grinding stone 
now its time to put your chicken into the boiling pot , add your ground contri onions and black pepper to it and stir slowly . you need to allow the water get dry completely and only the oil in the pot should be left . you taste the sauce to ensure everything thing is on point
its time to prepare your corn fufu 
pot water in a pot then allow it to reach it boiling point 
cut and mix a small quantity of corn flour in a bowl with cold water 
you may need to sieve your flour if you did not peel before grinding
get a flask or a pot that covers well to cut some of the boiling water and store so that it remains hot
pour in your mix corn flour in the remaining water and allow it to boil while stirring with a fufu stick 
ensure its gets ready well 
when its thick enough you can add some water and allow it to cook for sometime then you subsequently add your corn flour and turn to avoid lumps in the fufu corn 
the consistency of the fufu corn is not supposed to be too thick if not it will be hard when it gets cold 
ensure its get dry well to avoid a scenario where it cannot be stored for more than one day without it having an unpleasant taste or scent .
its time to serve your fufu corn you either use plantain leaf or plastic papers but plantain leaf is preferable for me because the increase occurrence of cancer we should learn not to use plastic papers to tie food
